I think 35 to 50 miles per day makes for very comfortable riding, with plenty of time for stops. We like to plan a fairly short day in the middle of our trips--this gives us a rest and more flexibility. Possible good stops for camping would include the Katy Roundhouse in New Franklin or Katfish Katy's dose Huntsdale, and the campground at Bluffton looks nice.
Klondike Park at Augusta also looks good.
Last month four of us each over 50 yrs. Riding east, our destination was the town of Defiance mile marker This portion was back along the river, with bluffs on one side.

The scenery was beautiful and the small number of riders allowed everyone to get to know each other and cheer each other on to the end of the trail. The only negative was that 5 pound weight gain because the dinners were five star quality every night and as one of my fellow riders declared the SAG stops were ran by the Martha Stewart of SAG stops aka Snowflake!

After a day of riding the Katy Trail I was looking forward to a comfy bed but what a pleasant welcome was just how top-notch the rhe were. From the incredible Ameristar Hotel in St Charles, MO to the bed and breakfast facilities in Hermann, the awesome historical Hotel Frederick in Booneville and on to the Hotel Bothwell in Sedalia the accommodations just kept getting better and better.
